Brien grew up in the kitchen with his Mom and is very passionate about everything he cooks. If it doesn't meet his standards we won't serve it. He insists on flavors that will make your taste buds dance. He believes that hunger should be respected and treated to the best flavors possible.
Starting a food truck has been something that Brien has dreamed about for years , but the ability to take on such a venture has been a struggle. Last year Brien was diagnosed with cancer just a few months after his father-in-law lost his fight to the same monster. Brien's father-in-law (Phil) was always impressed with all the food that came out of his kitchen and he told him that if he had the money he would invest it in him. When Phil passed away last year his wife was left a decent amount of life insurance and she made the decision to spend it the way Phil would have wanted her to, by investing it in Brien. Brien spent the better part of the past winter fighting his cancer and is currently cancer free and ready to take on this adventure.
Our Chef and owner was not alone in building this dream. He had the assistance of his loving wife, Stephanie who has stepped up to manage the business so Brien can concentrate on doing what he does best, cook.
